How to prepare Apricot And Pineapple Jam

Today’s Recipe is Apricot And Pineapple Jam. Children will really like to have this in their breakfast or to have it for school lunch. Mouth watering and tasty Jam, nice and simple way to prepare it.

Ingredients:

  • 500g (1lb) dried apricots
  • 1 small pineapple
  • 1.5 liters (6 cups) water
  • ¼ cup lemon juice
  • 1 kg (2lb) sugar

How to Prepare:

  1. Chop apricots roughly.
  2. Put apricots and water into large bowl, allow to stand 2 hours.
  3. Put apricot mixture into large saucepan, bring to boil, reduce heat; simmer, covered, for 30 minutes.
  4. Add peeled, cored and finely chopped pineapple, cover, simmer a farther 15 minutes.
  5. Put sugar into large baking dish, place in moderate oven for 7 minutes.
  6. Add sugar to apricot mixture, stir until sugar is dissolved.
  7. Add lemon juice, bring to boil, reduce heat so that mixture is at a fast simmer; cook for 30 minutes or until jam jells when tested on cold saucer.
  8. Stir jam frequently during cooking time.
  9. Pour into hot sterilized jars; seal.
  10. Makes approximately 2 liters.
